FAUX PICKLES

Faux Melon Mangoes

This dish represents a very popular British and British North American food of the 18th and 19th centuries. It’s mangoed melon,  a recipe developed to recreate the flavor and texture  of mango chutney. British members of the East India Company, and later the Raj, stationed in India wanted to be able to recreate mango chutney once they returned home. It’s made by pickling small cantaloupe melons (as a substitute for mangoes which were not available in England) stuffed with ginger, mustard seeds, garlic, cabbage, horseradish, nutmeg, cloves, etc. Other vegetables were also “mangoed.”
